1. Check your fridge. If you use butter, you can use less by diluting it half-and-half with olive oil. Let a bar of butter soften to room temperature. Beat it smooth and gradually beat in an equal amount of olive oil. It will be runny but will set up to a soft spread in the fridge.

2. Rethink the mayo. If you can’t live without it, make your own with olive oil. Then you will really have something worthwhile to spread on bread or to make a salad.

4. Keep a gallon bottle of water on the kitchen counter or at work. Drink at least half of it every day. Having it in plain sight will help you drink more of it.

6. Substitute whole grain bread for white bread. Beware of ‘wheat’ bread – it’s probably not whole wheat. If possible, go to a whole foods market and get some real whole wheat bread. In my area, I can buy incredibly good whole grain bread from Alvarado Street Bakery. You can buy it online, and if you do, put it in the freezer the minute it arrives. Because it’s ‘live’ and preservative free, it will get moldy very quickly if you leave it out. I particularly enjoy the Alvarado sprouted whole grain bread.

7. Having a whole foods market nearby makes it easy to cut down on processed food. If you make a trip a couple of times a week you can get all the super-fresh veggies and fruit you will need to provide a healthier diet for your family. For protein, focus on chicken – preferably baked or roasted. I use a lot of ground turkey – you can prepare it so many ways. If you work and are pressed for time, many whole foods markets offer excellent take out. It may cost more but it’s usually worth it.

You will notice I did not mention fish. I rarely buy fish because it’s so difficult to get good fish. If I can’t get wild salmon or other fish that hasn’t been farm raised, I don’t bother. I would never eat shrimp because it causes too many intestinal problems. There is another way to get the benefits of eating fish – in fish oil capsules. True, you run the risk of contamination there as well. But I think I’d rather opt for the capsules than supermarket fish that looks like it’s seen better days, and probably has.

8. Skip fried anything as much as possible. And you certainly won’t need your deep fat fryer anymore, so throw it away. (Well okay, give it away. But you won’t be doing anyone a favor.)

9. If you are an emotional eater, eat unbuttered popcorn or dry roasted nuts, such as almonds or cashews. You can flavor popcorn with garlic salt or any seasoning of your choice. Or try spritzing on garlic flavored olive oil. Drink green tea to wash it down. Most commercial green teas are bitter or tasteless but I have found some very tasty teas at Clipper teas.

A report made this year to the National Academy of Sciences by a research team headed by Dr. Cannon emphasizes that the minerals potassium, phosphorus and magnesium are essential in the diet for proper use of all body-building protein foods. This research team discovered that omitting potassium from the diet could lead to eventual congestive heart failure. Dead tissue developed within the heart muscles six days after potassium was taken out of the diet. But when potassium was restored to the diet, the body muscles began to rebuild, and the dead tissues in the heart healed. In other words, with potassium again present, protein could resume its appointed task of repairing and replacing body cells. Protein and minerals are the chief actors in the nutritional drama, while vitamins play a secondary, although essential, role (vitamins, the front-page news of the past decade, are now recognized as being solely activators, that is, substances needed to set other substances into action). To neglect any of these three food elements is to wreck the nutritional drama. Yet to star vitamins over protein and minerals is an equally unsound practice. You can’t repair your body cells with vitamins alone, nor can you expect vitamins to do the nutritional work of minerals.

Each of the three food elements-protein, minerals, vitamins has its own specific task in preparing your body for a long, youthful life. If I seem to emphasize protein and minerals more than I do vitamins, it’s only because I feel certain the vitamin story is well enough known not to need detailed repetition in this book. On the other hand, I’m afraid the mineral story has been too often pushed into the background by ‘sensational’ vitamin news. Yet today, more than ever before, nutrition experts are turning to mineral therapy. The final report of the New York State Joint Legislative Committee on Nutrition for 1947 contains an article by Dr. C. Ward Crampton, noted authority on diseases of older persons, in which he .states: ‘The foremost nutritional defects in the mature and aging are calcium, iron and protein.

Seventy-five per cent of the men of sixty suffer a lack of one or more. On the other hand, many suffer dietary excesses, notably carbohydrates and possibly cholesterol.’Dr. Crampton goes on to report that the American diet is more deficient in calcium than in any other food element. Our ordinary menu is calcium-poor. This calcium deficiency accumulates, becoming increasingly serious as the person grows older. Calcium is so important an ingredient of your blood that your bloodstream will attempt to maintain its calcium level, even though it has to rob other body parts of their vitally needed calcium. That is why, in many older persons, the bones, robbed of their calcium by the blood, become more fragile, resulting in easily fractured arms, legs and hips. It is also why calcium-starved heart muscles and brain cells often give up the struggle to maintain normal functioning in bodies that are comparatively young in years. Your nerves, your heart, your teeth, your brain cells, your blood-all need sufficient calcium to remain healthy, and to function as nature intended. Commenting that ‘calcium poverty is one common cause of aging that can be corrected,’ Dr. Crampton prescribes a grain of calcium lactate for each year of your age, taken in three doses three hours after each meal.

An inexpensive and convenient way to obtain added calcium in the diet is through the use of powdered skim milk. This dry milk provides needed calcium and protein, along with iron, copper, manganese, cobalt and other trace minerals-less the fats which are wisely limited during the later years. Even though you obtain ample calcium in your diet, quite unknowingly you may be allowing certain foods to rob your body of this vital mineral. Beet greens and spinach contain oxalic acid which deprives the body of its calcium; but you can eat turnip greens, kale and dandelion greens with full assurance that you are not upsetting the balance of this valuable mineral in your body. In fact, dandelion greens that springtime dish of your childhood-have high calcium and vegetable protein content which make them an excellent spring salad. Also, don’t indulge in cocoa or rhubarb too freely, since both of them have a high oxalic acid content, and by frequent use of these two foods you run the risk of lowering your calcium reserves. It is Dr. Crampton’s belief that a deficiency of iron is nearly always present in the ‘uncared-for person in the higher-age brackets.’ He says that the typical person of sixty is anaemic, iron-poor and body-poor, unnecessarily so. And this condition is worse in those persons who are following some unwise diet because of ‘dyspepsia’ or ‘indigestion.’ Insufficient hydrochloric acid in the gastric secretions is a common cause of iron poverty in the older body.

Minerals that regulate everything in the human body from ‘sight to sex’ are lacking in a vast acreage of the croplands that spread across our country. Agricultural scientists are accumulating more and more evidence that a wide variety of human ills are caused by the poor nutrition furnished by foods grown in mineral-starved soils. Dr. K. Starr Chester, head of a staff of farm researchers, has announced that numerous studies show the soil in nearly every state lacks one or more trace elements-cobalt, copper, zinc, manganese, boron. is generating headlines throughout the mainstream media in the United States and Europe.
Apparently generating headlines was the sole intention, as the study is neither new,
scientific nor objective.

The “study” was led by Serbian scientist and “visiting researcher” at Copenhagen University Hospital, Goran Bjelakovic, whose name is now synonymous with vitamin meta-analyses (studies of other studies) which appear to show that vitamin supplements either dont work or end up increasing your risk of death. Two similar Bjelakovic “studies” on vitamin supplements, in October 2004 and February 2007, resulted in similar outbursts of negative international headlines.

Upon closer examination, the flaws in the so-called study are apparent.  First of all, in evaluating studies for inclusion, the authors omitted a massive 405 potentially eligible studies because there were no deaths in the studies and another 69 studies were excluded because they werent randomized controlled trials.

In other words, instead of conducting an honest review of all the studies, the authors arbitrarily eliminated all studies in which vitamins prevented mortality and kept people alive – leaving only the studies in which people died from various causes.  Most of the trials used pertain to already sick people being given very high dose, synthetic, isolated nutrients for relatively short periods – they therefore have no relevance to the vast majority of vitamin consumers.

When you select or reject studies on criteria that only mean something to statisticians, and ignore important things like duration, how long the study ran for which ranged from 28 days to 14 years your findings are immediately meaningless.  Even the huge difference in dose of supplements between different studies was not deemed important – for example, Vitamin E ranging from 10 to 5000 units daily.

The studies in the latest meta-analysis not only relied on synthetic forms of vitamins, in most instances they relied on very high dosages of pharmaceutical-grade, synthetic forms of supplements manufactured by the pharmaceutical industry.  The dosages used are typically much greater than those recommended on the labels of food or dietary supplement products.  In most countries, the dosages used in the trials would be considered medicinal by regulatory authorities and therefore would not legally be allowed for food or dietary supplements.

As a result, these studies actually apply only to synthetic forms of vitamins produced by the pharmaceutical industry in amounts much larger than most consumers would ever take. The authors of this latest Cochrane review state: “The present review does not assess antioxidant supplements for treatment of specific diseases (tertiary prevention), antioxidant supplements for patients with demonstrated specific needs of antioxidants, or the effects of antioxidants contained in fruits or vegetables.” This shows that the study has no relevance to natural sources of vitamins and minerals or antioxidants sourced from plants (e.g. flavonoids, anthocyanins, sulforaphanes, salvestrols/resveratrol, etc.), which are included in many of the leading-edge natural health supplements claiming potent antioxidant activity.

Make no mistake, this isnt research. This is a re-analysis of studies that have been conducted and reported on previously, by a group of men with a known axe to grind, who have never produced a study favorable to supplements, which is itself statistically unlikely unless you have a bias.

There is extensive scientific evidence that higher intakes of vitamins in the forms and combinations consumed in the diet substantially reduce risk of killer diseases such as cancer and heart disease. In fact, it is this research (some of which is referenced in the introduction to both the JAMA and Cochrane papers) that has stimulated pharmaceutical companies to undertake research on pharmaceutical-grade, synthetic forms of supplements, which they manufacture. As is often the case when pharmaceutical companies try to synthesize or unnaturally isolate compounds found in nature so they can patent and profit from them, their synthetic version have been largely disappointing.

As a final note on the study: although presented as a “new”, the study is really no more than a rehash of a paper by the very same authors, published last year (February 2007) in the Journal of the American Medical Association (JAMA). Extensive international media followed the 2007 JAMA paper, including a front page articles in major newspapers telling consumers that vitamin pills could cause early death. The “new” study review relies on 67 of the 68 studies used in the JAMA paper.

The world pharmaceutical empire is a trillion dollar juggernaut whose continued profits depends on continued illness as well as a continued monopoly on approved medications and suppression of any alternatives which might provide prevention and treatment more effectively, more safely and less expensively – such as those found in nature. And so there are a trillion reasons why we see the repeated headlines about misleading and flawed studies like this one on vitamins, minerals and other natural supplements that represent billions of dollars in potential lost profits due to improved health and competition with patented drugs.

This is not about a specific product or brand.  For the past 50 years, Americans have been using
